He also owns Sublime Ale House in San Marcos. The focus at Sublime Tavern is flavor. The menu is a mix of gourmet comfort foods with lots of delicious reinterpretations of old favorites. Take the house mac n’ cheese. Appropriately, it’s called Ecstasy Mac n’ Cheese. Pasta is combined with Gorgonzola béchamel, applewood smoked bacon, wild mushrooms, roasted pepper, garlic and thyme. There’s a Parmesan shell you actually have to crack open. It’s not just a meal—it’s an experience. It’s also very close to Rancho Santa Fe homes!
Sublime Tavern is sure to become a local favorite of people who live in Rancho Santa Fe. In addition to the fantastic mac n’ cheese, there are also some fantastic pizzas. There’s the fancy Get Figgy With It Pizza, topped with figs, prosciutto, arugula, and Parmesan. But there’s also a simple and very good pepperoni. Limjoco pays close attention to getting the flavors and ingredients just right. He also focuses on farm-to-table, local produce.

With 55 craft beers on tap and 27 premium wines sold by the glass, this is the place to expand your palate.
