McCabe is perhaps best known as the former Executive Chef of the high-profile L’Augerge Del Mar’s Kitchen 1540.  Under his careful direction, K1540 became one of the hottest restaurants in San Diego.  McCabe has been heralded as a “rising star of American cuisine” by the James Beard Foundation, and his delectable dishes have crossed the palates of Hollywood’s A-list, international figures, and food critics from around the world.  He has earned many awards including the Golden Sceptre and Golden Baccus awards from Southern California Restaurant Writers, and has been invited to cook at the James Beard House in New York on several occasions.
McCabe began his culinary career as an apprentice for Chef Michel Blanchet of Sibu Cafe in Kona, Hawaii, where he learned Asian techniques that can be seen in his food preparation today.  McCabe came to San Diego in 2001 and has been exciting local diners ever since.
The menu that McCabe has created reflects his appreciation of fine, fresh food and his imaginative use of techniques.  He centers his dishes around local produce using organic and sustainable ingredients.  Menus are updated seasonally, so guests at Delicias know they will be served the freshest and most inspired creations.
Delicias is an excellent destination for lunch, serving up a variety of salads including the out-of-this-world Organic Beet Salad which features caramelized yogurt, citrus, and candied pistachios.  Enjoy a wood fired pizza prepared with your choice of toppings including prosciutto, chorizo and fresh basil.  The lunch menu also features some truly delectable sandwiches, including the BLTA with double smoked bacon, avocado (hence the “A”), romaine and heirloom tomatoes all snuggled into perfectly crusty sourdough bread.
Dinner is not to be missed at Delicias, with a wide range of dishes to satisfy every taste.  A must-try includes the Organic Corn Agnolotti which is made with poached Maine lobster, chanterelle mushrooms and summer truffles.  For those with simpler tastes, try the May Ranch Natural Cheeseburger which comes with caramelized onions, aged cheddar and house pickles.  Pair your meal with any number of fine wines found on Delicias’ extensive wine list.
Top off your memorable meal with a selection from their dessert menu.  The Red Velvet Cake features brown butter ice cream and candied beets, while the Grilled Nectarine and Blackberry Cobbler will dazzle with its sour cream ice cream.
